Tokubetsu refer to special so Tokubetsu Honjozo means Honjozo made of special ingredients and skills. Leaving 70% of rice for fermentation is to leave more protein for fermentation to pull up more Umami (which is the fifth taste alongside sweet, sour, salty and bitter.) of rice. In general, Honjozo has earthy and sweet flavour.
