Sharp (acidic) citrus fruit Citrus sudachi. Smaller than its close relative the yuzu, it has the same pale-yellow color when ripe. Unlike the yuzu, it is used, usually while still green (in summer and autumn), for its sharp juice and fragrant zest. It goes very well with matsutake.
